  • 1 C. unsalted butter, at room temperature
  • C. cup brown sugar
  • half of a 3.4 oz. package vanilla instant pudding mix
  • half of a 3.4 oz. package chocolate instant pudding mix
  • 2 large eggs
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. rum extract
  • 2 1/4 C. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 C. chopped raisins or dried cranberries
  • 1 C. semi-sweet chocolate chips

Using a mixer, beat together butter and sugars until smooth. Split the batter in two bowls. In one, add in vanilla pudding mix, one egg and vanilla extract. In the other, pour chocolate pudding mix, the remaining egg and rum extract. In a medium bowl, whisk together the flour, baking soda, and salt. Divide the flour mixture between the two bowls with wet ingredients mix until just combined. In the vanilla batter, stir in dried fruits; in the chocolate batter, throw in the chocolate chips. Bake the cookies for 10 to 12 minutes and transfer them to a cooling rack. Best enjoyed with a glass of cold milk!
