Chewy Double Chocolate Peanut Butter Cookies

These are my husband and my son's favorite cookies. They puff up in the oven and as they cool they flatten and get chewy.

  • 1 1/4 C. softened butter
  • 2 C. sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 2 C. self-rising flour
  • 3/4 C. cocoa powder
  • 1 C. peanut butter chips
  • 1 C. semi-sweet chocolate chips
  • 1 C finely chopped nuts (your choice)

Heat oven to 350 degrees. In bowl, cream butter and sugar until light and fluffy. Add eggs and vanilla and beat well. Sift together flour and cocoa, gradually add to the butter mixture and beat until well blended. Fold in nuts and both kinds of chips. Drop by rounded teaspoons onto ungreased baking sheet. Bake 8-9 minutes. Cool on cookie sheet until set about 3 minutes.
