Ingredients

  • 1 lg. egg white
  • 3/4 C. all-purpose flour
  • 1/2 C. sugar
  • 3 Tbs. stick margarine, melted
  • 1 tsp. grated lemon rind
  • 1/2 tsp. lemon extract
  • 1/4 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 1/8 tsp. salt
  • cooking spray

Directions

Preheat oven to 350 degrees.  Place egg white in a bowl and beat with a whisk until foamy.  Add flour and next 7 ingredients and stir until smooth.  Drop teaspoonfuls onto baking sheets coated with cooking spray.  Bake for about 8 minutes, or until edges are golden.
