Dump the oatmeal raisin cookies and upgrade to cranberries. These cookies are simply made and full of subtle flavor from the cinnamon and vanilla. The walnuts give it a nice crunch and make for the perfect oatmeal cookie.

  • 3 C. rolled oats
  • 1 ½ C. all-purpose flour
  • 1 ½ C. unsalted butter
  • 1 C. brown sugar, packed tight
  • ½ C. granulated sugar
  • 1 ½ C. dried cranberries
  • 1 C. walnuts, chopped
  • 2 eggs
  • 1 Tbs. ground cinnamon
  • 1 Tbs. vanilla extract
  • 1 tsp. baking soda
  • ½ tsp. salt

Preheat the oven to 350 degrees. Combine the oats, flour, cinnamon, baking soda, and salt. In a standing mixer, cream the butter and sugars until they’re fluffy. Slowly add in the eggs and vanilla. Fold the flour mixture into the butter mixture. Fold in the cranberries and walnuts and refrigerate the dough for an hour at least. Scoop the dough onto a greased baking pan and bake for 15 minutes.
