  • 4 Tbs. unsalted butter
  • 1/4 C. brown sugar, packed
  • 1/4 C. honey
  • 2 C. plain granola
  • 1 C. rice cereal
  • 2 Tbs. Graham cracker crumbs
  • 1 C. Mini marshmallows
  • 1/2 C. semisweet chocolate chips

Line a 11x7 baking pan with parchment paper and lightly butter the paper. In a saucepan, combine the butter, honey, and brown sugar over medium heat and stir constantly until the butter has melted. Bring it to a boil, then lower the heat to medium low and simmer until the sugar has dissolved, about 2 minutes. Remove the saucepan from heat and stir in the granola, rice cereal, and graham cracker crumbs. Gently fold in the marshmallows and spread the mixture into the prepared pan. Press firmly to fill the pan firmly and sprinkle the chocolate chips onto the top. Let the pan sit for 15 to 20 minutes, or until mostly cooled and set. Remove the parchment paper from the pan and cut the granola into bars. If the bars aren’t holding together, harden in the fridge for 10 to 15 minutes.
