  • 1 C. sliced strawberries
  • 1 tsp. lemon juice
  • 2 C. + 1 Tbs. all-purpose flour
  • 1 C. + 1 Tbs. sugar
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 6 tbs. butter, diced
  • 1/2 C. sour cream
  • 1 tsp. vanilla extract
  • 2 tsp. lemon zest

Preheat oven to 375 degrees. In a mixing bowl, toss together strawberries, lemon juice, 1 Tbs. flour and 1 Tbs. sugar. Place in refrigerator. In a medium mixing bowl, sift together 2 C. of flour, 1 C. sugar, baking powder, baking soda and salt until combined. Using a pastry cutter or forks, cut in butter. Mix in sour cream, vanilla extract and lemon zest.

Fold in strawberry mixture. Spray a baking sheet with non-stick cooking spray or line with parchment paper. Scoop dough into golf ball sized shapes and place on baking sheet about 1-inch apart. Bake for 18-20 minutes. Let cool and serve.
