Chia Berry Cookies

- 1/2 cup blueberries
- 1/2 cup chia seeds, plus extra
- 2 tablespoons virgin coconut oil
- 1/4 cup almond meal
- 2 tablespoons all natural peanut butter
- 1 tablespoon whey protein powder (flavor is up to you! We used chocolate!)
In a food processor, blend the blueberries until smooth. Pour them into a bowl with the coconut oil and peanut butter. Mix in the chia sees, almond meal, and finally the protein powder. Mix until everything is combined. If the dough feels too runny, you can add in more chia seeds or protein powder.
Roll the dough into 2 inch balls and coat each ball with the extra chia seeds. Then, place the balls into an airtight container lined with wax paper and refrigerate for 2 hours.
