  • 5 bags of popped popcorn separated
  • For Caramel:
  • 2 C. dark brown sugar
  • 1/2 C. light corn syrup
  • 2 sticks sweet cream butter
  • 1/2 tsp. baking soda
  • 2 tsp. pure vanilla extract
  • For Cheddar:
  • 6 T. melted butter
  • 1/2 C. cheddar cheese powder

Preheat oven at 200ºF.

In a lined baking pan pour 2 1/2 bags of popcorn onto sheet and set aside. In a large sauce pan over light heat combine all the caramel ingredients except for the vanilla and baking soda. Bring contents to a boil, stirring often to blend contents. remove from heat and stir in vanilla and baking soda. Pour over popcorn immediately and stir to coat. Place pan in oven and let bake for 45 minutes, stirring popcorn ever 15 minutes. Take out of oven to cool, try to break up clusters before popcorn fully cools.

For Cheddar corn:

In a large brown bag pour 2 1/2 bags of popcorn in, pour melted butter in bag, seal and shake the bag to coat all the kernels pour cheddar powder into bag and shake vigorously to coat corn. Combine caramel and cheddar corn in a large bowl and serve.
