This simple delight of this salad is perfect for a quick and easy lunch. Drizzle a homemade buttermilk dressing over your lettuce, bacon and chicken to give your salad a creamy blend of garlic and herbs.

  • Dressing:
  • 1 cup buttermilk
  • 1 1/2 cups mayonnaise
  • 2 Tbsp. chives, finely chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. parsley, chopped
  • 2 tsp. kosher salt
  • 1 1/2 tsp. sugar
  • 1-2 tsp. fresh lemon juice
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/8 tsp. dried dill weed or 1/2 tsp. fresh
  • Dash of black pepper
  • Salad:
  • 5 slices of bacon
  • 3 cups of sliced cooked chicken
  • 12 leaves romaine lettuce
  • ½ cup of croutons
  • 2 eggs, hard-boiled

Start your salad by frying your bacon in a nonstick pan over medium to high heat, 10 minutes.
Remove from pan and let drain on paper towels.
In a large bowl mix together your lettuce, chicken, croutons and eggs.
When bacon has cooled, add bite-sized pieces to your salad for a nice crunch.
Put that aside and get ready to make your dressing.
In a bowl whisk together buttermilk and mayonnaise. Add the rest of your ingredients and mix until texture is smooth.
Spread dressing over your salad and serve.
