  • 1 onion, diced
  • 1 green bell pepper, chopped
  • 4 stalks celery, chopped
  • 2 C. chicken broth
  • 2 boneless chicken breasts, cooked and shredded
  • 1 C. brown rice
  • 4 (15 oz.) cans black eyed peas, with juice
  • 1 (10 oz.) can diced tomatoes and green chilies
  • 1 (14 oz.) can diced tomatoes
  • 2 cloves garlic, minced

In a large pot, heat oil and sauté onion, garlic, green pepper, and celery until softened. Add in chicken broth, rice, chicken, black eyed peas with juice, diced tomatoes with green chilies, and diced tomatoes.
