  • 4 slices of ciabatta or sourdough bread
  • 2 tablespoons olive oil
  • 1½ cups cooked chicken breast, lightly shredded
  • 4 slices Gouda cheese
  • ½ cup arugula, washed
  • 1 tomato, sliced

Heat a panini press. Brush one side of the breads with olive oil and lay oiled side down. Arrange the cheese (2 slices on each piece of bread), tomato, arugula and shredded chicken on the bread. Cover with another slice of bread, oiled side up, and grill on the panini maker for 3-5 minutes or until golden brown and cheese is melted. Slice in half and serve.
