  • 1 pound macaroni
  • 1 ½ pounds cooked lobster meat
  • 4 skinless, boneless chicken breast halves
  • 1 quart milk
  • ½ cup flour
  • 4 cups grated cheese
  • 1 ½ cups bread crumbs
  • 8 tablespoons butter
  • ½ teaspoon pepper
  • ½ teaspoon nutmeg

Preheat the oven to 375 degrees F and boil salted water in a large pot. Add the macaroni and cook for 8 minutes before draining. Heat the milk in a saucepan without boiling it. Melt 6 tablespoons of the butter in the large pot and add the flour. Cook over low heat and stir with a whisk for 2 minutes. Add the warm milk and continue to whisk, cooking an additional minute. Remove from the heat and add the cheese, the pepper and nutmeg. Cut the chicken into cubes and cook in a large skillet over medium heat for 6 minutes. Add the chicken, lobster, and macaroni to the milk mixture and combine well. Transfer to a baking dish. Melt the remaining butter and combine with breadcrumbs. Sprinkle breadcrumbs over the baking dish and bake for 35 minutes.
