Chicken And Mushroom Casserole

- 4-5 large chicken wings, cut into 1 -inch thick strips
- Salt, to taste
- Pepper, to taste
- 1 C all-purpose flour
- 6 Tbs. olive oil, divided
- 1 lb. fresh mushrooms, sliced
- 1 onion, diced
- 2 Tbs. minced garlic
- 1 1/2 C chicken broth
Preheat oven at 350 degrees.
Season chicken wings with salt and pepper. Cover in flour.
Heat 3 tablespoons olive oil in a skillet over medium-high heat. Add chicken and sauté until golden. Place chicken in a casserole baking dish.
Add 3 tablespoons olive oil in the same skillet with sliced mushrooms and diced onions. Sauté until soft. Add garlic and sauté for another 1 to 2 minutes. Spread mixture over the chicken.
Bring chicken broth to a boil. Pour over the chicken and mushrooms.
Cover casserole dish with foil and bake for 45 minutes.
