This is a delicious casserole to make for any occasion. The chicken and mushrooms mix so well together that you won't be able to decide which one you like more. This casserole can be paired with rice and potatoes if you need an additional side to go with it.

  • 4-5 large chicken wings, cut into 1 -inch thick strips
  • Salt, to taste
  • Pepper, to taste
  • 1 C all-purpose flour
  • 6 Tbs. olive oil, divided
  • 1 lb. fresh mushrooms, sliced
  • 1 onion, diced
  • 2 Tbs. minced garlic
  • 1 1/2 C chicken broth

Preheat oven at 350 degrees.

Season chicken wings with salt and pepper. Cover in flour.

Heat 3 tablespoons olive oil in a skillet over medium-high heat. Add chicken and sauté until golden. Place chicken in a casserole baking dish.

Add 3 tablespoons olive oil in the same skillet with sliced mushrooms and diced onions. Sauté until soft. Add garlic and sauté for another 1 to 2 minutes. Spread mixture over the chicken.

Bring chicken broth to a boil. Pour over the chicken and mushrooms.

Cover casserole dish with foil and bake for 45 minutes.

Serve warm.
