  • 2 cups cooked brown rice
  • 2 Tsp. sesame oil
  • 1 lb. chicken breasts, cut into 1” cubes
  • 1 cup sugar snap peas
  • ½ C. corn
  • 1 red bell pepper, chopped
  • 5 Tbs. low-sodium soy sauce
  • 1 tsp. cornstarch
  • 1 tsp. rice vinegar

Heat oil in a skillet and cook chicken until no longer pink. Add peas, corn, and bell peppers and cook until tender, stirring occasionally. In a bowl, whisk together soy sauce, cornstarch, and rice vinegar. Add sauce to the pan and cook for 1 minute. Serve over the rice.
