Special Budget Recipe This chicken and potatoes recipe is a one pan meal everyone enjoys. Just bake, and serve with rice and you've got a meal!

Ingredients

  • 3-4 chicken breasts with bones ($7.00)
  • 3-4 large potatoes ($1.29)
  • 1 onion ($0.99)
  • 1 pkg. onion soup mix ($0.50)
  • Water or chicken broth/stock*
  • TOTAL COST: $9.78

Directions

Place chicken in a deep baking pan with a lid or foil. Chop potatoes into big bite-size pieces. Dice onion and add to the pan. Add onion soup mix, salt and pepper. Fill to the top of the chicken and bake for 45-65 minutes at 400 degrees.*Pantry Staple.   • I so agree with everyone here before me. Why add rice? I would add tomatoes, green beans and maybe carrots.... not two starches. Also, I do not ever use my large oven except for mulitiple food dishes at the same time. For economy I would use the crock pot or do it very low on the top of the stove, using one burner only.

  • I'm trying it tonight, but won't be adding rice. I will add carrots to the pot, though. I wonder, could it be cooked in the slow cooker if you used legs instead of breasts? It would be a bonus on busy days.

  • I agree with the others, why would you even think to add rice when you have potatoes? Adding a salad or a another vegetable would make it a great meal.

  • This is the same recipe I use for my pot roasts and I add carrots and to the pan.

    Rice & Potatoes? Way too much starch. Need more non starch veggies with this.
