Ingredients

  • 1 1/2 C. cooked chicken, chopped
  • 3/4 C. spinach, chopped
  • 1/2 C. cherry tomatoes, sliced
  • 1/4 C. mushrooms
  • 1 lg. garlic clove, minced
  • 3 Tbs. vegetable oil
  • 6 eggs, beaten
  • 1 1/2 C. cheddar cheese, shredded
  • 1/4 C. half and half
  • 1 tsp. salt
  • 1/4 tsp. pepper

Directions

Heat cooked chicken, spinach, mushrooms, tomatoes, and garlic in oil until tender. Beat eggs and pour half in half in same bowl. Add cheddar cheese, salt and pepper. Mix well. Pour vegetables and then pour egg mixture over. Cook on high for 1-1/2 hour.
