Chicken and Squash Casserole

I came up with this one day when we had a bunch of leftovers.

Ingredients

  • 4 C. cooked, chopped chicken
  • 6 C. boiled squash
  • 1/2 C. chopped onion
  • 1 C. shredded carrot
  • 1 10 3/4 oz. can cream of chicken
  • 1 1/2 C. sour cream
  • 1 box chicken flavored stuffing mix
  • 1/2 C. butter

Directions

Preheat oven to 350 degrees. Combine chicken, squash, onions, carrots, soup and sour cream. Toss stuffing mix and butter together. Place half of the squash mixture into a greased casserole dish, then place the stuffing mix on top of the squash mix, then top it off with the rest of the squash mix. Cover and cook for 30 minutes and then uncover and cook for an additional 15 minutes.

  • I have been making this recipe for 22 years now. Its was given to me from a friend of mine in Fort Knox Kentucky. I Cant thank of any two left overs that you would have used to throw this recipe together..lol. But still the same its a good one. The family loves chicken squash night! BTW.. use 2 pounds of squash. That should give you just enough after its been peeled and sliced. Cook Onion in a microwave dish in microwave till tender in about two tablespoons of butter. Cook carrots and sq
