  • 2 tsp. olive oil
  • 1 bag rice
  • 12 oz. skinless, boneless chicken breast, cut in strips
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 carrot
  • 1/2 C spinach
  • 1 C broccoli florets
  • 1 C snap peas

Prepare rice according to package directions.

Heat a large skillet with oil; swirl to coat. Add chicken and cook for two minutes on each side, or until done. Add peppers, carrot, spinach, broccoli and peas. Cook for two minutes or until tender.

Serve in bowl with rice.
