Ingredients
- 2 T. light mayonnaise
- 2 tsp. chipotle in adobo sauce
- 2 slices bread of choice
- 1/2 C. cooked chicken, shredded
- 1 slice provolone cheese, torn into strips
- 1/2 C. baby arugula
- 1 T. butter

Directions
In a small bowl, mix together mayonnaise and chipotle sauce. Add in chicken and toss to evenly coat. Spread butter on one side of each slice of bread. Place chicken mixture on one slice of bread and sprinkle with cheese and arugula. Top with remaining slice of bread. Heat a small skillet over medium heat. Carefully add sandwich to skillet and cook until lightly toasted with melted cheese.
