Chicken/Avocado Tacos

  • Boil 2 Chicken Breasts (skinned, de-boned and chopped)
  • 1 Avocado
  • 1/4 C. of Mayo
  • 1 Tbs.of Lemon or Lime Juice (fresh is better) Salt and Pepper to taste

Mix all ingredients together. If filling is too dry add more mayo. Fry the corn tortillas and assemble like regular tacos. Topping them with shredded lettuce, diced tomatoes, and onion. Don't forget to add a small amount of your favorite hot sauce to top off these delicious tacos.

Makes about 8-10 tacos.
