  • 6 corn tortillas
  • 6 chicken breast halves, cooked and cubed
  • 1 (4 oz). can chopped green chilies
  • 1 sm. onion, chopped
  • 1 (2.5 oz.) can sliced black olives
  • 6 oz. Cheddar cheese, shredded and divided
  • 8 oz. Monterey Jack cheese, sliced
  • 2 (10 oz.) cans enchilada sauce

Preheat oven to 350 degrees.  Rinse tortillas in water to soften.  Pour 1/2 cup of enchilada sauce on bottom of a greased 9x13 inch baking dish.  Layer all tortillas in a baking dish.  Place chicken on top, then layer onion, Cheddar cheese, black olives, and chilies.  Top with Monterey Jack cheese.  Pour remaining enchilada sauce over the top and sprinkle remaining cheddar cheese on top.  Bake for 30-40 minutes.
