  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 3 oz. mozzarella cheese, chopped
  • 4 slices bacon, cooked and chopped
  • 1/4 tsp. basil
  • 1 C. flavored bread crumbs
  • sprig of fresh parsley, chopped
  • 2 tsp. olive oil
  • 2 eggs
  • 1/2 C. milk
  • 1/2 C. flour
  • 2 tsp. butter
  • 4 wooden toothpicks

In a mixing bowl, add mozzarella, bacon, and parsley.  Mix well.  Oil an oven-proof casserole dish.  In a mixing bowl, beat eggs and milk.  Add flour to a flat plate.  Add bread crumbs to another flat plate.  On a flat surface, lay out chicken.  Spoon cheese mixture in center of each chicken breast. Fold chicken over cheese and roll like a jelly roll.  Secure with a toothpick.  Dredge chicken with flour, then egg mixture.  Roll in bread crumbs.  Put chicken roll in casserole dish and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes.  Remove from oven to heated plates and remove toothpicks.
