Chicken Barley Soup

Ingredients

  • 4 med. chicken thighs, skinned
  • 1/2 C. barley
  • 5 1/2 C. chicken stock
  • 1 stalk celery, chopped
  • 3 sm. carrots, sliced
  • 1 lg. tomato, peeled and chopped
  • 2 cloves garlic, minced
  • 1 Tbs. soy sauce
  • 1/2 Tbs. basil
  • 1 dash oregano
  • 1 dash thyme
  • 1 dash cayenne pepper

Directions

Place all ingredients in a crock pot. Cook 8-10 hours on low heat. Shortly before serving, remove chicken thighs. Let cool slightly, remove meat from bone, chop and return meat to soup. Serve.
