Chicken Breast Strips with Mushrooms
Ingredients
- 5 tsp. butter or margarine
- 1 1/3 C. sliced mushrooms
- 1/4 tsp. thyme
- 1 tsp. lemon juice
- 4 tsp. veg. oil
- 1 lb. chicken strips
- 1 C. evaporated milk
- 1 can cream of mushroom soup
- 4 tsp. parsley
Directions
Melt butter and sauté mushrooms until golden. Add thyme and lemon juice, stir and set aside. Separately, heat oil and sauté chicken, season with salt and pepper to taste; drain. Fold evaporated milk into the cream of mushroom soup and boil l minute over medium heat. Add mushroom mixture and chicken to mushroom soup mixture and stir. Sprinkle with parsley if desired to garnish.
Serves 4
