  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 1/2 C. flour
  • 1 C. chicken stock
  • 2 tsp. lemon juice
  • sprig of chopped parsley
  • 1 sm. onion, chopped
  • 2 tsp. butter

In a flat dish, press chicken in flour on all sides.  In a small bowl, combine chicken broth, lemon juice, parsley, and chopped onion.  Lay out floured chicken breasts in an oven-proof casserole dish.  Add lemon mixture to chicken and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes.  Remove chicken from oven to heated plates and spoon the remaining sauce over the chicken.
