Chicken Broth

Ingredients
- 1 4-lb. chicken, cleaned and left whole
- 1 tsp. salt
- 4 stalks celery
- 2 med. carrots
- 1/2 med. can tomatoes
- 3 qts. water
Directions
Place cleaned and washed chicken in cold water, add salt and bring to a boil. Remove scum that forms on top of water. Add celery, carrots and tomatoes, cover pan and cook for 1 1/2 hours for a tender chicken and 2 1/2 hours for a tough one. Add a little water if soup seems too condensed. Remove chicken whole and serve as you wish. Strain broth.
