Ingredients

  • 1 cup brown rice
  • 4 medium boneless, skinless chicken breast
  • 1 packet taco seasoning
  • 2 tablespoons freshly chopped cilantro
  • Guacamole
  • Salsa
  • 2 bell peppers
  • ½ onion
  • 2 cups lettuce
  • ½ cup black beans
  • 2 cups water
  • 1 teaspoon vegetable oil

Directions

First of all, combine the chicken and taco seasoning with 1 tablespoon of oil in a large bowl. Marinate the chicken in the fridge for 20 minutes. Then, heat a large pan with medium-high heat and cook the chicken for 5 minutes per side or until they are fully cooked. Remove the meat from the pan and cool for 5-10 minutes before chopping into bite size pieces. In the pan add another teaspoon of oil and sliced peppers and onion. Sauté for 4 minutes. For the rice, boil 2 cups of water in a large pot with high heat and add the rice. Season with salt and pepper and reduce the heat and cook until the rice is tender. Assemble the bowls by dividing the rice, chicken, veggies, and beans into portions evenly. Add guacamole and salsa.
