  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp. oil
  • 3 boneless, skinless chicken breasts, cut into strips
  • 1 12-oz. can black beans, rinsed and drained
  • 1 1/2 C. hot salsa
  • 1/2 tsp. chili powder
  • 6 whole-wheat tortillas
  • 3/4 C. pepper jack, shredded
  • 6 C. fresh spinach, shredded
  • 1/2 C. nonfat sour cream
  • lime wedges

In a skillet, cook onion and garlic in oil over medium-high heat until onion is clear. Add chicken; cook 4 minutes or until no longer pink. Stir in beans, 1/2 cup salsa, and chili powder. Cook for 2 minutes more. Place tortillas between damp paper towels and microwave on high 10 seconds. Spoon 1/2 cup filling onto each tortilla; top with pepper jack. Fold each into burrito. Serve with 1 cup spinach, salsa, lime wedges, remaining cheese, and sour cream.
