Chicken Cacciatore
Ingredients
- 1 lg. frying chicken, cut up
- 1/2 C. canola oil ( to fry chicken in)
- 2 med. red peppers ( cut into 1" pieces)
- 2 med. green peppers ( cut into 1" pieces)
- 2 med. red onions ( cut into 1" pieces) Two tsp. crushed garlic ( approx. two cloves)
- 3/4 C. chicken broth.
- 1 28-oz. can tomato sauce
- 1 12-oz. can diced tomatoes
- 2 Tbs. tomato paste
- 1 1/2 tsp. oregano
- 1 1/2 tsp. basil
- 5 sprigs fresh thyme
- salt and pepper to taste
- cooked rice
Directions
Heat oil in large skillet. Brown chicken, and remove. Place aside. Add green peppers, red peppers and onions to pan. Saute for 5 minutes. Add tomato paste, garlic, oregano, basil and thyme, and stir gently. Once you smell the garlic, add chicken broth, stir to combine. Simmer on low until broth is absorbed. Watch carefully, stirring often. Add tomato sauce, diced tomatoes, salt and pepper stir to combine. Add chicken pieces. Gently cover chicken with the sauce. Cover skillet with lid and simmer 25 minutes until chicken is just cooked through. Do not overcook. Remove from heat and uncover. Let sit 5 minutes, and serve over rice.
