Chicken Cacciatore
Ingredients
- 1/4 C. flour
- 1 tsp. seasoned salt
- 6-8 chicken thighs with bone (I used legs and breast)
- 2 Tbs. oil
- 1 onion, sliced
- 1 bell pepper, sliced
- garlic to taste
- 2 cans chopped tomatoes
- 1/2 C. red wine
- Italian seasoning
- 1 bay leaf
Directions
Mix together flour and seasoned salt in zip-lock bag or on disposable plate. Coat each chicken piece. Heat oil over medium high heat and brown chicken. Once chicken is browned, add onions, pepper and garlic to pan, sauté until they start to softened. Add remaining ingredients to pan, cover and cook for 10-15 minutes, until chicken is almost cooked through. Remove lid and simmer for 5- 10 minutes until sauce starts to thicken. Remove bay leaf and serve over pasta.
