A classic Italian dish that will make everyone come running back for seconds.

Ingredients

  • 4 chicken breast halves, skinned and boned
  • 2 Tbs. olive oil
  • 1/4 C. fresh mushrooms, sliced
  • 1 clove garlic, minced
  • 1/2 tsp. dried oregano
  • 1/4 tsp. ground pepper
  • 1 1/2 tsp. salt
  • 2 Tbs. flour
  • 2 Tbs. dry sherry or white wine
  • one 16-oz. can chopped tomatoes, drained (reserve liquid)

Directions

Heat olive oil in skillet and brown chicken breasts on both sides.  Remove.  Ad sliced mushrooms to skillet and saute.  Add garlic.  Return chicken breasts to pan.  Make a paste with flour and sherry and then blend in reserved liquid from canned tomatoes.  Add to skillet, stirring to blend.  Add chopped tomatoes and seasonings to skillet.  Cover skillet and simmer 20 minutes or until chicken is tender.  Serve with pasta.


Serve with: Salad di Cipolle
