Chicken Casserole

A great chicken dish using left over chicken or turkey!

Ingredients

  • 1 1-lb. bag frozen broccoli florets
  • 8-10 oz. leftover chicken or turkey, cubed or sliced
  • 1 10.5-oz. can fat free cream of chicken soup
  • 3/4 C. low-fat mayonnaise
  • 3/4 C. low-fat milk
  • 1 Tbs. lemon juice
  • 1 C. shredded 2-percent cheddar cheese

Directions

Place broccoli in a microwave 8x8-inch dish and microwave on high for 7 minutes. Place chicken or turkey evenly on top of broccoli. Mix together soup, mayonnaise, milk and lemon juice. Pour over chicken broccoli mixture. Sprinkle with cheese and bake in a 350-degree oven for about 20 minutes or until cheese is melted and casserole is bubbly.
