Chicken, Chorizo and Bean Bake

A whole meal in one dish, this recipe is fantastically easy to prepare and very tasty.

  • 4 pieces chicken
  • 1 can white beans, drained
  • 1/2 a lemon, sliced
  • 1 chorizo sausage, sliced
  • 4 cloves garlic, smashed
  • 1 C. chicken stock
  • 1/2 teaspoon pimentón de la vera (Spanish paprika)
  • Olive oil
  • Sea salt and freshly cracked black pepper
  • Optional: shredded Mexican cheese for topping

Place drained beans in baking dish and pour chicken stock over them. Add chicken. Cover with lemons, chorizo and garlic. Drizzle olive oil over the entire thing. Sprinkle with paprika, salt and pepper to taste.

Cook in 400 degree F oven for 45 minutes or until chicken is done.Recipe adapted from Donna Hay’s Smoked Paprika Chicken and Lemon Bake and seen on 80 Breakfasts.

Top with cheese if desired.

  • To pastafind: I live in an area of a large Portuguese population, and there choucico, is smoked before you purchase it. You can buy it in links, ground, or patties. It can be fried, boiled, or baked. I will try to put some recipes using chourico this winter. Chourico in one word, Um

  • There are many types of chorizo - some are dried and some are raw and uncooked. The raw, uncooked chorizo will be mushier and more like ground meat. Try using a dried chorizo and you should get the consistency you want.

  • What kind of Chorizo? I've bought three kinds and when I try to cut them into slices, its mush. How many types are there anyway?
