Chicken Curry

This is a very famous Indian side dish. It goes very well with bread, chapattis (Indian flatbreads) or rice.

Ingredients

  • 2 lb. chicken
  • 2 med. onions
  • 1 lg. tomato
  • 1/2 C. ginger garlic paste
  • 3 tsp. red chilli powder
  • 1/2 tsp. turmeric powder
  • 1 tsp. garam masala powder
  • 1 tsp. cumin seed powder
  • 2 tsp. coriander powder
  • 3 tsp. salt
  • 1/4 C. cilantro
  • oil

Directions

Wash and remove the skin from the chicken. Cut chicken into pieces of required size. Remove all water and keep it aside. Finely chop the onions. Heat oil in a heavy bottom pan. Add chopped onions to hot oil and fry them until golden brown. Add red chilli powder and turmeric powder and fry it for few seconds. Add ginger garlic paste and fry on medium flame until oil oozes out. Add chicken, tomatoes, cumin powder, coriander powder, and salt. Stir well so that all the ingredients will mix together. Cover with lid. Let cook for 20-25 minutes until chicken is fully cooked. Keep stirring in between. Add chopped cilantro.Note: If you want to add water to improve consistency, wait until the end and then let it boil for 2 minutes after adding.
