Chicken, Eggplant, Zucchini and Mushroom Bake

  • 1 Tbs. flour
  • 1 14-oz. jar tomato and basil pasta sauce
  • 2 boneless chicken breast halves, cubed
  • 2 C. cubed eggplant
  • 1 sm. zucchini, sliced
  • 1 sm. onion, sliced
  • 1 can sliced mushrooms, drained
  • 1/4 tsp. oregano, crushed
  • 1 8-oz. pkg. capellini pasta, cooked and drained
  • salt
  • pepper

Preheat the oven to 350 degrees. Flour the chicken cubes. Place the chicken cubes in a baking pan that has been lightly greased. Mix the eggplant, zucchini, onion, and mushrooms. Place all vegetables over the chicken cubes. Add oregano, salt and pepper. Pour tomato and basil pasta sauce over the chicken-vegetable combination. Cover with aluminum foil. Bake in oven for 40-45 minutes. In the meantime, prepare the pasta. When chicken-vegetable combination is baked, serve over hot pasta.
