Chicken Enchiladas Crockpot

When you want Mexican for dinner without all the work, this is a great short-cut with the same end product.

Ingredients

  • 1 large can enchilada sauce
  • 4 chicken breasts
  • 2 cans cream of chicken soup
  • 1 small can sliced black olives
  • 2 dozen corn tortillas
  • 1 chopped onion
  • 1 pkg. sharp cheddar cheese, grated

Directions

Cook chicken and shred. Mix soup, olives and onions. Cut tortillas in wedges. Layer crock pot with sauce, tortillas, soup mix, chicken and cheese all the way to top, ending with cheese on top. Cook on low temperature all day in crock pot.

  • This was a good "base" for building crockpot enchiladas. I used green enchilada sauce becuase that is our preference for chicken enchildas. The recipe as written was not as flavorful as we like. I added some ground cumin, garlic and cilantro to the recipe, as well as some salt. I also used quesadilla & monterey jack cheeses rather than cheddar because we prefer those when making mexican dishes. I will definitely make this again, but will probably continue to experiment with it unt

  • I tried this recipe yesterday. I was a little leery about cooking for 6 hours since there wasn't a lot of liquid in it. It turned out wonderful! 5 chef hats to you!

  • I think I figured it out, you have to start on the right, the highest number of hats or else you must end prematurely.

  • This was really tasty! I needed to use all of the tortillas instead of 3/4's of the amount. I cut the recipe in half and 1 dozen corn tortillas seemed like too many. I wish I had used the 1 dozen, but I will make this again!! It was D-Lish!!

  • I tried this today, but didn't have enough time to cook it all day, so I put it into a 350 oven for 45 minutes. I'm waiting to try it! Boy, the house smells great!

  • I did not have enchilada sauce, so I used 1 can of rotel. Wow!!! delicious! My family and friends loved it.
