  • 3 large eggs
  • kosher salt
  • freshly ground black pepper
  • vegetable oil
  • 4 boneless skinless chicken breasts halves, diced
  • 1 tsp. sesame oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1/2 C. frozen vegetables of choice
  • 4 C. cooked rice, cold
  • 6 green onions, thinly sliced
  • 2 T. soy sauce

In a small bowl, beat eggs with salt and pepper. In a large frying pan, heat a little bit of oil over medium heat. Cook eggs until firm, coarsely chop, and set aside. In a large bowl, add chicken, sesame oil, salt, and pepper. Heat a little bit more oil in the large skillet over medium heat. Stir-fry the chicken until golden. Add the onions, garlic, and frozen vegetables. Continue to stir-fry for a few more minutes. Add a little bit more oil and stir in the rice and onions. Drizzle with soy sauce, remove from heat, and stir in egg.
