  • 1 pound skinless boneless chicken breast halves
  • 1 tablespoon flour
  • 2 tablespoon soy sauce
  • 2 tablespoons sugar
  • ½ cup cilantro leaves
  • 3 peeled and chopped garlic cloves
  • 2 cups coconut milk
  • 1 tablespoon fish sauce
  • 2 chopped green onions
  • 2 tablespoons green curry paste
  • 2 tablespoon olive oil

Cut the chicken into 1 inch-cubes and then toss with 1 tablespoon soy sauce. Toss the chicken in the flour next so they are fully coated. Heat the oil over medium-high heat in a large skillet and add the chicken. Cook for 5 minutes and set aside the chicken. Lower the heat and add curry paste to the skillet. After one minute, add the green onions and garlic. Cook for 2 minutes and then add the chicken back to the pan. Stir to coat. Pour in the coconut milk, fish sauce, and soy sauce. Add the sugar and stir. Simmer for 20 minutes over medium heat. Garnish with cilantro.
