  • 2 whole chicken breasts, skinned, boned, halved, and flattened
  • 2 oranges, peeled and sliced with seeds removed
  • 1/2 C. flavored bread crumbs
  • 2 tsp. butter
  • 1 C. orange juice
  • 1 tsp. soy sauce
  • 1/4 tsp. ginger
  • 1/4 tsp. allspice
  • 2 tsp. brown sugar
  • sprig of fresh chopped parsley

In a flat dish, press crumbs into chicken on all sides.  In a bowl, combine orange juice, soy sauce, ginger, allspice, and brown sugar.  Using half the butter, butter one oven-proof casserole dish.  Lay out chicken in casserole dish. Put orange slices on chicken and add orange juice mixture on and around chicken.  Garnish with parsley and dot with butter.  Bake in a preheated 400-degree oven for 20 minutes.  Remove chicken with casserole to heated plates and spoon remaining sauce over chicken.
