Chicken in the Crockpot

The chicken will be falling apart tender. Be careful removing it from the crock pot.  The leftovers can be turned into a stew by adding gravy and peas, or a potpie by adding gravy, peas, and a bottom and top crust.

Ingredients

  • 1 whole chicken or 2-4 breasts
  • 1 lb. baby carrots or chopped, sliced whole carrots
  • 1/2 bunch celery, including tops
  • 1 onion, chopped
  • 1 Tbs. Italian seasoning
  • 1 1/2 C. water
  • 4-6 medium size potatoes

Directions

Turn crock pot on high.  Put a whole chicken or 2-4 breasts into the pot.  Add a lb. of baby carrots or chopped sliced whole carrots. If you plan to freeze the leftovers, peel the carrots first, or else they turn black when frozen.  Add at least half of a bunch of celery, including the tops, sliced lengthwise and then crosswise.  Add one onion, chopped.  Add Italian seasoning.  Add 1 1/2 cups water.  Add 4-6 medium size potatoes, quartered.  Put on the lid.  Cook 6-8 hours.  Serve as is or over rice.
