Chicken in the Crockpot

Ingredients
- 1 whole chicken or 2-4 breasts
- 1 lb. baby carrots or chopped, sliced whole carrots
- 1/2 bunch celery, including tops
- 1 onion, chopped
- 1 Tbs. Italian seasoning
- 1 1/2 C. water
- 4-6 medium size potatoes
Directions
Turn crock pot on high. Put a whole chicken or 2-4 breasts into the pot. Add a lb. of baby carrots or chopped sliced whole carrots. If you plan to freeze the leftovers, peel the carrots first, or else they turn black when frozen. Add at least half of a bunch of celery, including the tops, sliced lengthwise and then crosswise. Add one onion, chopped. Add Italian seasoning. Add 1 1/2 cups water. Add 4-6 medium size potatoes, quartered. Put on the lid. Cook 6-8 hours. Serve as is or over rice.
