Chicken In Wine with Mushrooms
Ingredients
- 24 saltines
- 1/2 tsp. salt
- 1/2 tsp. tarragon
- Dash pepper
- Roll out and mix above ingredients in gallon-size zipper food storage bag. Dampen 4 large boneless, skinless, chicken bread pieces, and then shake in crumb mixture. Brown in one stick of butter. Remove to baking dish.
- Using same frying pan, with the leftover butter and cracker bits still in it, mix:
- 1/4 C. chopped onion
- 1/2 C. sliced fresh mushrooms
- 1/4-C. chicken broth
- 1/2 C. white wine
Directions
Simmer mixture 5 minutes and pour over chicken. Cover tightly with foil. Bake 45 minutes at 350 degrees.
