Chicken in Wine with Mushrooms
Ingredients
- 24 saltines
- 1/2 tsp. salt
- 1/2 tsp. tarragon
- Dash pepper
- 4 large boneless, skinless chicken breasts
- 1/4 C. chopped onion
- 1/2 C. sliced fresh mushrooms
- 1/4-C. chicken broth
- 1/2 C. white wine
Directions
Preheat oven to 350. Roll out and mix first four ingredients in gallon-size zipper food storage bag. Dampen chicken and shake in crumb mixture. Heat one stick of butter in frying pan and add chicken. Cook until brown, a couple minutes each side. Remove to baking dish. Using same frying pan, with the leftover butter and cracker bits, mix in the onion mushrooms, chicken broth, and white whine. Simmer mixture 5 minutes and pour over chicken. Cover tightly with foil. Bake 45 minutes at 350.
