Chicken In Wine with Mushrooms
Ingredients
- 4 large boneless, skinless chicken breasts
- 24 saltines
- 1/2 tsp. salt
- 1/2 tsp. tarragon
- Dash pepper
- 1/4 C. chopped onion
- 1/2 C. sliced fresh mushrooms
- 1/4-C. chicken broth
- 1/2 C. white wine
Directions
Roll out and mix saltines, salt, tarragon, and pepper in gallon-size zipper food storage bag. Dampen 4 large boneless, skinless, chicken breast pieces, then shake in crumb mixture. Brown in one stick of butter. Remove to baking dish. Using same frying pan, with the leftover butter and cracker bits still in it, mix in other ingredients. Simmer mixture 5 minutes and pour over chicken. Cover tightly with foil. Bake 45 minutes at 350 degrees. Serves 4.
