  • 8 oz elbow pasta
  • 2 tablespoons butter
  • ½ onion, diced
  • 2 cups cooked chicken, cubed
  • 4 oz Velveeta
  • 4 oz white Velveeta
  • 1 can cream of chicken soup
  • ½ cup sour cream
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 1½ cups cheddar cheese, shredded
  • ½ cup Mozzarella cheese, shredded

Preheat the oven to 350°F and cook the pasta according to the box. Melt the butter in a large pot over medium heat. Add the onion and sauté for 5 minutes, or until tender. Toss in the Velveeta and cook for 2 minutes stirring occasionally or until the cheese has melted. Stir in the chicken, cream of chicken soup, sour cream, chili powder and cumin. Grease a baking dish with cooking spray and pour in half of the pasta mix. Top with half of the cheddar and mozzarella cheeses, top with the rest of the pasta and repeat with the cheese topping. Bake for 25 minutes, or until bubbly.
