Chicken Made Easy
Ingredients
- 2 Tbs. butter
- 2 Tbs. olive oil
- 4 skinless boneless chicken breast halves
- 1/4 C. flour
- 1/4 C. grated parmesan cheese
- 2 C. sliced fresh mushrooms
- 4 Tbs. minced shallots
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 oz. grated mozzarella or swiss cheese
Directions
Pound chicken breasts flat. Mix flour and Parmesan cheese. Coat chicken breasts in mixture. Melt butter and olive oil over medium heat. Add chicken and cook 5-8 minutes on each side, or until thoroughly done. Add mushrooms and shallots and season chicken, mushrooms and shallots with salt and pepper. Sprinkle with grated cheese and cook until cheese melts.
