Chicken Marsala

This one is made with a less expensive cooking sherry instead of marsala wine.

Ingredients

  • skinless, boneless chicken breast halves
  • 1/4 C. all-purpose flour for coating
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/2 tsp. dried oregano
  • 4 Tbs. olive oil
  • 4 Tbs. butter
  • 1 C. fresh sliced mushrooms
  • 1/2 C. Marsala wine
  • 1/4 C. cooking sherry

Directions

Pound chicken breasts until flat and thin. Set aside. In a shallow dish or bowl, mix together the flour, salt, pepper and oregano. Coat chicken pieces in flour mixture. In a large skillet, melt butter in oil over medium heat.  Place chicken in the pan, and lightly brown.  Turn over chicken pieces, and add mushrooms.  Pour in wine and sherry.  Cover skillet; simmer for 10 minutes, turning chicken pieces once.
