Chicken Marsala

A dark brown sauce mixed with mushrooms makes this chicken dish to die for.

Ingredients

  • 1 oz. clarified butter or oil to fry
  • 1 double breast of chicken
  • 2 oz. flour, for dusting
  • 2 oz. sliced Button, Shiitake, or Portobello mushrooms
  • 3 pieces of scallion, diced
  • 4 oz. sweet Marsala wine
  • 1 tsp. beef base
  • 2 oz. heavy cream
  • 1/2 tsp. minced garlic
  • 1 minced shallot

Directions

Add oil to hot pan, sauté chicken. Remove chicken, add Marsala. When flame disappears, add mushrooms, scallions, garlic, and shallot. Sauté until mushrooms are tender. Add beef base, simmer. Add cream and simmer. Whisk in butter, and add chicken. Simmer 1 minute or so, and serve.

Makes 2 servings.
