  • 1 pound ground chicken
  • ¼ cup grated parmesan
  • ¼ cup panko bread crumbs
  • 1 egg yolk
  • 1 cup marinara
  • 8 slices provolone cheese
  • 4 bread rolls
  • ½ teaspoon Italian seasoning
  • Salt and pepper

Preheat the oven to 400 degrees F and grease a large baking dish. Mix the chicken, Italian seasoning, parmesan, panko, and egg yolk in a bowl. Season with salt and pepper and continue to mix. Shape into about 30-32 balls and transfer the balls to the greased dish. Bake for 25 minutes. Cut the bread rolls horizontally and divide the meatballs evenly between the sandwiches. Add ¼ cup marinara and 2 slices of cheese to each sandwich. Bake the sandwiches for 5 minutes so that the cheese melts.
