This is a fantastic recipe for meatloaf using chicken instead of meat. This is a must try!

  • 1 medium onion, chopped
  • 1 celery rib, chopped
  • 3 cloves garlic, minced
  • 1-1/4 C. canned chicken and rice soup
  • 1/2 C. fresh breadcrumbs
  • 1/4 C. grated Parmesan cheese
  • 1-1/2 lbs. ground chicken

Preheat oven to 350 degrees. Combine first 6 ingredients in a medium bowl. Add ground chicken and salt and pepper to taste and mix well. Transfer to an 8x4 inch loaf pan. Bake about 1-1/4 hours or until a meat thermometer inserted in center of loaf reads 160°F. Let stand 5 minutes before slicing.

Yield: 4 Servings.
