Chicken 'n' Berry Salad

This salad can be eaten any time of year, but it's especially great in summer when blueberries and strawberries are in season!

Time needed

15 + marinating min preparation + 10 min cooking

Ingredients

  • 1/2 C. sugar
  • 1/2 C. red wine vinegar
  • 1/2 C. olive oil
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 lbs. boneless skinless chicken breasts
  • 6 C. torn romaine
  • 6 C. torn red leaf lettuce
  • 1 pt. fresh blueberries
  • 1 pt. fresh strawberries, sliced
  • 2 C. shredded part-skim mozzarella cheese
  • 1 C. chopped walnuts

Directions

In a large bowl, whisk the first six ingredients. Pour 3/4 cup marinade into a large resealable plastic bag;l add the chicken. Seal bag and turn to coat; refrigerate overnight. Cover and refrigerate remaining marinade. Drain and discard marinade. Grill chicken, covered, over medium heat for 5-8 minutes on each side or until juices run clear. Cut into strips. In a large bowl, combine the lettuce, blueberries, strawberries, cheese and walnuts. Add reserved marinade; toss to coat. Top with sliced chicken.
